Spring Salmon & Asparagus Galette
The Perfect Recipe to Celebrate Mother’s Day
This rustic galette is the perfect way to celebrate Mother’s Day—whether you’re honoring birth moms, dog moms, stepmoms, or chosen moms. Paired with a chilled glass of Mascarin Rosé of Pinot Noir, it creates a memorable meal that’s both elegant and approachable. The flaky pastry, savory salmon, and bright spring vegetables beautifully complement the wine’s freshness, making it ideal for a festive brunch, picnic, or al fresco lunch.
Ingredients
- 1 sheet of puff pastry or pie dough (store-bought or homemade)
- 1 fillet of fresh salmon (about 6 oz), skin removed
- 1/2 bunch asparagus, trimmed and cut into 1-inch pieces
- 1/2 cup ricotta or goat cheese
- 1/4 cup crumbled feta cheese
- 1 small shallot, thinly sliced
- 1 tablespoon olive oil
- 1 teaspoon lemon zest
- 1 tablespoon fresh dill or tarragon, chopped
- 1 egg, beaten (for egg wash)
- Salt and pepper, to taste
Instructions
1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper.
2. In a skillet over medium heat, add olive oil and sauté the shallot and asparagus for 2–3 minutes, just until bright green. Season lightly with salt and pepper. Remove from heat.
3. Roll out the pastry into a rough 12-inch circle on a lightly floured surface. Transfer to the prepared baking sheet.
4. Spread the ricotta or goat cheese evenly over the center of the pastry, leaving a 2-inch border.
5. Lay the salmon fillet on top of the cheese. Scatter the sautéed asparagus and shallots over the salmon. Sprinkle with crumbled feta, lemon zest, and fresh herbs.
6. Fold the edges of the pastry up and over the filling, pleating as needed to create a rustic edge, leaving the center exposed.
7. Brush the pastry with the beaten egg.
8. Bake for 25–30 minutes, or until the pastry is golden and the salmon is cooked through.
9. Let cool slightly, then slice and serve warm or at room temperature.
Serving Suggestion

Celebrate Mother’s Day with a meal that’s as special as she is—fresh, colorful, and perfect for sharing.
